sakura, matcha & kurogoma petits choux

When you can’t choose between sakura, matcha, or kurogoma choux, you make all of them :D I used a mix of white and brown sugar to make the pastry discs on top of the choux, and they turned out perfect. I find that when I just use white sugar, the top doesn’t crack as beautifully; making them look more like Chinese pineapple buns XD
