It must have been at least 2 years since I had sakura éclairs on my list of things to make. I used a fondant white chocolate glaze for the top, and tinted it a pastel pink colour. For the filling, I made a pastry cream with sakura paste. So decadent :)
I hope when I visit Vancouver in a few weeks, the sakura trees would have blossomed already. Can’t believe there’s only 2.5 weeks left until vacation :)!!
