Hello! This year I decided to work with Sakura (cherry blossom) again, creating a limited edition cake available until April 30, 2015. Because work’s super busy, I don’t have time to come up with more Sakura desserts than I’d like. I will definitely be experimenting with Sakura éclairs in the near future though, so please look forward to the recipe soon ^^
I tried to incorporate as many Sakura components as I could. I ordered them online and they were shipped to me from Kanagawa. I used Sakura honey syrup, Sakura bean paste & pickled Sakura in the cake. Here are the layers: sakura honey syrup soaked berry génoise, sakura bean paste filling, sakura chantilly cream & pickled sakura decorations. I really love how clean, simple, and pretty it looks.
